In today’s Travel Gluten-free Podcast, we are joined by Kyle Dine, the founder, and creator of Equal Eats Cards. Kyle has created one of the most important tools for the gluten free traveler or anyone with food allergies who eat out, especially when you’re traveling to another country.

Growing Up with Multiple Food Allergies

Kyle grew up with multiple food allergies since he was a baby. His allergies include peanuts, tree nuts, eggs, and shellfish. In addition, his wife has Celiac disease, so their kitchen is color coded, and they each have their own appliances to prepare food at home.

Creating Equal Eats Cards

Seeing a need for a professionally translated allergen card that would be taken seriously by wait for staff and others in the food industry, Kyle went on to survey over 2000 people with food allergies along with 60 professionals in the healthcare industry to find out what they were looking for when it came to an allergy translation card. He repeatedly found that the card needed to be plastic, have allergen information, and need to list what to avoid and what precautions to take when making food for those of us with dietary restrictions.

Gluten-free Versus Certified Gluten-free

In America, it takes up to six months to pull a product that doesn’t have the correct label off the shelf, so you want to be keen on any product labeled as gluten-free because it might have been processed in a facility that handles wheat. Find out why as a Celiac, you should always go for certified gluten-free products. I will also share the certifications that come with certified gluten-free foods.

Gluten-free Bread Ingredients

Listen in as I share the different non-grain gluten-free flour, usually made from root vegetables or nuts. Gluten-free grain flours are okay for Celiacs so long as they are produced in a facility that doesn’t handle gluten. Find out some amazing grain-based gluten-free flour to bake your bread.

Additional Ingredients for your Gluten-free Bread

Gluten-free bread tends to be a little drier because they lack gluten. What do you need to know when you’re a gluten free traveler? While there are many details you need to plan for your trip, here are a few new ones that I haven’t talked about on previous episodes of the Travel Gluten-free Podcast. Today, I’ll give you great gluten free travel advice to travel safely, no matter where your gluten free adventure ends up taking you in the world!

Traveling with Your Medicine Bag

When flying gluten-free, you want to know about this not-well-known piece of information. If you have a disability, and any auto-immune disease is considered a disability, you have the right to carry one extra bag for medical supplies. In addition to the two bags you can carry on, you get one extra. Here’s the link to the TSA article, which explains in detail what you can bring and what they allow on the airplane when you travel with a medical bag.

Call to Verify Your Fridge, Microwave, and Freezer at Your Hotel or Air

Always call ahead - ideally before you book your stay - to find out if they have these much-needed vacation items or if they can provide them to you upon your arrival.

Cover Your Cooking Surfaces

Don’t believe it when you hear that gluten can cook off of surfaces! This is simply not true. You need to assume that all surfaces have gluten on them, because, well, that’s the world we live in! This is the second of a three-part series where I chat with Tony Labbe of @labbetravel about the culture, things to do, and insider tips on six of the Hawaiian Islands. In part II this week, I’ll be talking to Tony about the beautiful islands of Molokai and Kauai, what’s unique about each of these islands, his favorite places to stay and recommendations on

The Hawaiian Islands

Did you know there are a total of 132 islands in Hawaii? With eight main islands, Hawaii is the only state that is entirely surrounded by water and the only state that was formerly ruled by a monarchy and the only state that grows coffee.

The earliest settlers arrived in Hawaii around 800Ad, and Captain Cook was the first European voyager to discover Hawaii in 1778. Once Hawaii was incorporated into the United States, Lahaina, Maui was the first capital, which was then moved to the current capital of Honolulu on the big island.

Mauna Kea, on the Big Island, is the tallest mountain in the world when measured from the seafloor, and Hawaii has many active volcanoes that are in the process of making this island chain larger every year. Besides being the tallest mountain, this is also the location of a ski resort and receives snow every winter!

My guest, Tony Labbe, suggests trying several different restaurants while visiting any Hawaiian Island as world-renowned chefs are cooking up exquisite meals at many of the culinary choices in Hawaii. For those of us who are gluten-free, this equates to having the ability to safely eat gourmet meals with a beautiful view of the ocean!

Cruise Hawaii

Tony suggests flying into Hawaii and starting at one of the islands for your Hawaiian cruise. When you begin your Hawaiian journey from the islands, you’ll forgo the long trip across the ocean and spend many of your cruise days at sea. Easily go island hopping and find new adventures on your journey!

Things to do in Molokai

“Molokai is usually not the first Hawaiian island people visit,” says Tony. Off the beaten path, rustic and rugged environment so much so that there are no stop signs or stoplights on the entire island! A much simpler lifestyle on this island, “When you get there, you just slow down.”

Even though Hawaii is known for its championship golf, there are no golf courses on Molokai. Unlike its other island counterparts, Molokai does not feature luxury resorts. Tony suggests going to this unique island to experience more Hawaiian cultural foods, such as Poi, the fresh fish such as Ahi, and other local dishes.

Visiting Kauai

The geologically oldest island, Kauai, has lush rainforests, with the North Shore receiving the most rainfall of this island. On the top of the list for places to visit is Waimea Canyon, dubbed the “Grand Canyon of Hawaii,” take a helicopter ride to the Nepali Coast, and, of course, hiking through the forest.

Take to the water for river or sea kayaking, SUP, and snorkeling. Find some of the most fantastic ziplining through the Kauai rainforest, or take an UnCruise aboard a ship with only 34 other passengers to experience the ultimate in luxury cruise travel!

Today I’m delighted to host Ellen again as we share some top tips for gluten-free travel. Ellen started Gluten-free Vacations to help gluten free travelers plan their vacations to the Caribbean, Mexico, and Disney.

Always Pack Gluten Free Snacks

Ellen once made the mistake of not packing gluten free snacks on one of her travels and could only find French fries as a gluten free option. It is important to pack snacks even if you think you will find gluten free food during your trip. We also talk more about the range of snacks to carry and how to pack them.

Take Gluten Free Translation Cards with You

Although you can use Google translate to make translation cards or explain to someone in another language what you need to eat, Google does not always do a great job on translation accuracy. Make sure to carry translation cards with you when you travel. You could contact the local chamber or embassy for assistance in finding someone to help you create a translation card in another language. We also share an app that you can use to pull up restaurant cards in this episode!

Talk to the Chef to Find Out What’s Gluten Free

Introduce yourself to the chef or the restaurant manager, and let them know your need for gluten free food is for medical reasons rather than a personal preference; besides asking the chef what gluten free foods they have, find out how they prepare food in the kitchen. For instance, if they have separate fryers to avoid cross-contamination or if they change their gloves before they prep your food.

Ask for a Microwave and Mini Fridge for Your Gluten-Free Food

Getting a microwave or mini-fridge is one of the most helpful elements when traveling and staying in a hotel or air. However, if you have a refrigerator with hotel food, make sure not to remove that food from the fridge in the hotel you are staying in and put yours in the refrigerator because you will be charged for using their food. Call the front desk to request another refrigerator for your gluten free food.

Notify Your Host of Your Gluten-Free Dietary Needs

Our final tip is on why calling your hosts, be it the resorts, restaurants, cruises, or airplanes, ahead of time and letting them know your dietary needs will make your vacation a better experience for you, your host, and your family or friends that you are traveling with on your adventure!

S01 Episode #16 Back to School Gluten-Free Episode 16 we are going to talk about back to school. Not just snacks and lunches, but how you can create a legal document which binds the school and every professional who comes in contact with your child to your child's diet for celiacs or gluten intolerance. As a parent, we want our kids to be safe, at home, and school. When they aren't with us, we can't see what they are eating or doing. How, as a parent, can you add in some safety measures for your student at school, when you aren't with them? Shop with your child. Have your child have snacks in her backpack that are gluten-free that they can always eat on the go that is easy for them to handle depending on the age level there are different treats or snacks that are easy for them to feel. If your child is in elementary school, their teacher may be able to keep a box or a bag of pre-made shelf-stable snacks in their room for your child. If you go this route, mark your bag CLEARLY with your child's name, age, grade, teacher, and gluten-free/Celiac. There are many things happening in your teacher's day, and you want to make sure that your bag of snacks is not mistaken for something or someone else and gets eaten by someone other than your child. If your Child is celiac, you should also get them a 504 plan. What this means is that they have a legal and binding document which gives them a unique accommodation. Every teacher must sign the paper that comes in contact with your child during the school day, including administration. The 504 plan lays out what your child's dietary restrictions are, as you, the parent, outline their restrictions when you meet to create your student's 504. Traveling to London? You’re in luck! Episode 77 is targeted toward gluten-free food in London! Listen in to find out how you can find gluten-free food in London, what restaurants I loved to eat at and the European Allergen Codex and how you can use this allergen codex while you are traveling in Europe. Find fabulous places to eat and a new trick I learned on how to find gluten-free places to eat when you’re traveling abroad.

If you’re interested in fun gluten-free food, London, England is the place you want to visit! You’re bound to find gluten-free in many food ethnicities when perusing London restaurants. Like fried food? No worries! London is teeming with food establishments that have dedicated fryers. I’ve eaten more than my fair share of fried food while in London, and I believe you will too!

Want to eat a delicious gluten-free dessert from a dedicated gluten-free bakery? You’ll find many dedicated bakeries, so eat pastries, doughnuts, and croissants to your heart’s content - and remember to leave space in your luggage to bring home goodies you’ve acquired from London!

European Allergen Codex

European Allergen Codex is a system in which you can easily see what allergens are in different foods in restaurants. When you use this system, remember that they list the opposite of the US - where we show what foods you CAN eat, the European Allergen Codex shows which allergens are in the food. For example, if you see the letter “G” next to a food, that food contains gluten and is NOT gluten-free.

This Codex is the same system across the countries in Europe which I have traveled, which is nice to worry about one less thing when you are eating while traveling. If the restaurant doesn’t have the Codex Allergen list on their menu, as the maitre’d if they have an allergen menu as they may have a few copies of a special menu which labels allergens. Many restaurants I ate at in Europe were very accomodating and went out of their way to serve safe food.i

Better Quality Food in London and Europe

With the exception of the plane ride, I’m always excited about traveling to and in Europe, especially when I think about the amazing food I’m going to eat. The quality of food is much better, as many foods are locally sourced and fresh. Europe does not use GMO and modified foods on the scale as we do in the US and factory farming isn’t their mainstay for raising food. Because of these factors, the food in Europe tastes better, and has less of the chemicals and hormones which we have in our food.

I’ve heard from other Celiacs that they can eat the dairy in Europe, but not the US. I have experienced the same. While I can eat imported dairy without issue, American dairy poses many digestive issues for my system.

Vegetarian and Vegan Options in London

My daughter Aliyah is Celiac and vegetarian, which offers yet another level or two of complexity when we eat out. In London, however, there are quite a few options for those who are both gluten-free and vegetarian or vegan. I’ve even come across vegetarian restaurants who offer many gluten-free options on their menu! There are many vegetarian and vegan options in general in London. Additionally, many restaurants also offer dairy-free!

Gluten-Free Friendly Restaurants in London

My favorite restaurant in London, by far, was Honest Burgers. Located at 9 festival terrace, South Bank, London. They have dedicated gluten-free fryers, onion rings, burgers, can eat all fried foods. They also have gluten-free brews, incredible to eat burger, onion rings and brew together

Tips on Camping Gluten-Free

Since many people have been camping for their COVID vacation, I wanted to share with you great gluten-free food prep tips for creating meals, camping snacks, and food storage when you're camping. I've learned these experiences the hard way by making mistakes while on the road and eating out of the back of my car or at the campfire. Take steps to eliminate the hassle and expending energy on clean up when you're camping with these camping COVID-19 tips!

Gluten-Free Snacks for Hiking

If you are going hiking and need hiking snacks, the most efficient way to pack these is to buy single servings and put one type of snack in each Ziploc bag - this is one of the expenses I will incur because Ziploc is sturdier than other brands of plastic storage bags.

Marinating Gluten-Free Foods

An easy and efficient way to prepare your marinated food is to take your favorite gluten-free salad dressing and place your meal to be marinated into a double Ziploc. If you are using tofu, make sure to use firm tofu and plan to eat the first or second night, as tofu can fall apart quickly. Also, make sure to cut in thick slabs to be more sturdy.

For a quick and easy marinade, take your food to be marinated, add favorite salad dressing, place in double Ziploc, close bag, take all air out, then seal. Keep cold until ready to use.

Gluten-Free COVID Camping Soups

To create easy soups, prep and blend your spices ahead of time and put them in an air-tight container. Label your container. Use dried spices instead of fresh if you are not going to use them in the first two days. Then, bring along canned items that you are going to use to make your soup. Make only the amount you need for one night - storing leftovers is time and energy-consuming.

My Favorite Gluten-Free Travel Snacks

Chips and Crackers

I love to eat chips and crackers. I’ll be the first to admit this without shame! My favorite flavor of chips is sea salt and vinegar, hands down! Here are a few of the chips and crackers I mention in this episode.

Kapop Snacks are tasty, crunchy and packed full of nutrition! Using ancient grains, these goodies are wholesome and tasty as well! Check out my interview with Dustin Finkle, where we talk about how he came up with KaPop! Snacks in episode 56.

Mosaics are another snack I really like. Similar to KaPop! Instead of using ancient grains, they have a base of organic yellow and green peas for their chips. Look for the green spotted triangles at a store near you and listen to episode 54 to find out my favorite Spinning Wheels brand snack!

Jai Mix, the “compellingly tasty” snack mix, which puts your favorite Indian and Thai flavors into one bag! My favorite? The spicy coconut! Delicious, savory and spicy all wrapped into one, go to this website to order a case of Jai Mix, because, trust me, you won’t be able to stop at just one bag!

One of the newest snacks I’ve found which I love to travel with are LesserEvil Organic Paleo Puffs Gluten Free Himalayan Salt 'N Apple Cider Vinegar. They are like corn puffs, minus the corn, with more nutrition and taste amazing!

Favorite brands of crackers include Milton's Crackers, Simple Mills, Lance Gluten-Free and any cracker, cookie, cake from Schar. They even have a recipe page online, and a travel locator where you can find many tasty treats to create gluten-free!

Another one of my favorite brands is Kinnikinnick. They have amazing vanilla wafers and gluten-free graham crackers, among other mouth-watering treats.

Protein Bars and Shakes

I commonly carry protein bars and shakes with me, whether I’m working on-the-go or I’m traveling, these are an easy way to get clean and nutritious snack any time of the day or night!
