S01 Episode #16 Back to School Gluten-Free Episode 16 we are going to talk about back to school. Not just snacks and lunches, but how you can create a legal document which binds the school and every professional who comes in contact with your child to your child's diet for celiacs or gluten intolerance. As a parent, we want our kids to be safe, at home, and school. When they aren't with us, we can't see what they are eating or doing. How, as a parent, can you add in some safety measures for your student at school, when you aren't with them? Shop with your child. Have your child have snacks in her backpack that are gluten-free that they can always eat on the go that is easy for them to handle depending on the age level there are different treats or snacks that are easy for them to feel. If your child is in elementary school, their teacher may be able to keep a box or a bag of pre-made shelf-stable snacks in their room for your child. If you go this route, mark your bag CLEARLY with your child's name, age, grade, teacher, and gluten-free/Celiac. There are many things happening in your teacher's day, and you want to make sure that your bag of snacks is not mistaken for something or someone else and gets eaten by someone other than your child. If your Child is celiac, you should also get them a 504 plan. What this means is that they have a legal and binding document which gives them a unique accommodation. Every teacher must sign the paper that comes in contact with your child during the school day, including administration. The 504 plan lays out what your child's dietary restrictions are, as you, the parent, outline their restrictions when you meet to create your student's 504. Meredith the "Celiac Cutie"

S01 Episode 15 Meredith the "Celiac Cutie" Meredith was diagnosed with Celiac Disease on January 29th of 2016. She remembers this day because it was her sister's birthday and also the first family gathering where she had to figure out what she could eat now that she was celiacs. That day marked the beginning of her journey with an auto-immune disease. She says even with a supportive family how alone Celiac makes her feel at times or just how many times I could be humiliated at a restaurant. She became an instant friend to those who understood her whether it was the doctors and researchers at the Celiac Disease Center at Columbia University or the random people that shared their stories with her on social media. While trying to find out where she fit in, in this new gluten-free community, Meredith found some gluten-free t-shirts. Most shirts were very down and cynical about being gluten-free. Meredith, being positive and happy, didn't feel those shirts reflected who she was and how she wanted to be perceived. With the help of her sister-in-law, she started creating graphic designs for her new line of t-shirts. She received so much positive feedback, including the feeling of empowerment when wearing her t-shirt. Meredith decided she wanted her t-shirts to be a conversation starter. Her goal was to have the company be a starting point for people to come together and share their journey. Meredith also wanted to give back to the Celiac Disease Research Center at Columbia University. We chat about how she chooses designs for her shirts, why so many love wearing her soft and easy-to-take-care-of t-shirts and what Meredith's plans are for future Celiac Cutie t-shirts! Celiac Cutie is a company that is fashion-forward, community-based, and research driven. Celiac Cutie celebrates the journey we are all on together. Her goal is to create a community where we celebrate and share our message with a little humor and fun products. Meredith is using the fun products that she creates to start discussions and help raise awareness of the gluten-free community. S01 Episode 17 Erika Demmer from Celiac and the Beast Erika was diagnosed in 2009. She is a full-blown Celiac with a sprinkling of gastroparesis, osteopenia, hypermobility disorder, endometriosis, thyroid shenanigans, and a whole host of other health issues. She didn't realize that cosmetics could have wheat as the main ingredient, but when she realized that most of her cosmetics contained wheat, she threw out most of her shampoo, conditioner, body wash, and cosmetics and started with new, fresh gluten-free cosmetics. Erika doesn't love cooking (aka she throws a lot of my failed dishes out). To eat, she uses a lot of gluten-free products. She says she lives with a "great dude" who is super into the gluten-free lifestyle – even though he is not gluten-sensitive In her past life, Erika's career landed in the PR, advertising, and corporate market, research.
