First, Mark Iacono, well revered pizzaiolo and owner of Lucali in Carroll Gardens, Brooklyn, which he founded in 2006 and has since received national recognition. Mark recently opened Baby Luc's, a new slice shop down the block from Lucali, plus, he’s expanded his beloved pizzeria to Miami. Prior to finding Lucali, Mark worked in construction and focused on granite and marble fabrication. He has starred in multiple shows including Netflix's Ugly Delicious, The Pizza Show and Munchies. And, secondly, Billy Durney, owner of Hometown Bar-B-Que in Red Hook, Industry City and Miami, and Red Hook Tavern in Red Hook, Brooklyn. After almost 20 years in the security and private protection field, Billy fulfilled a longtime dream by becoming head pitmaster, opening Hometown in 2013 to great success, going on to further expansion. A graduate of the Culinary Institute of America, Scott’s career spans over 30 years, including multiple restaurants, an enthusiastic following of fans and an ever-expanding brand. He opened L’Impero in 2002, garnering a three-star review from The New York Times, the title of “Best New Restaurant” from the James Beard Foundation, and he was named one of America’s Best New Chefs in 2004, among other accolades. His current restaurants include Mora Italian in Phoenix, Arizona; and Italian steakhouse Cellaio at Resorts World Catskills in Monticello, New York; plus, he has his signature line of cooking and pantry essentials, Sprezza. Scott has appeared on the Today Show, The Chew, CBS’ The Talk and Good Morning America, and is a regular judge on Chopped, consistently one of Food Network’s highest rated programs. In May 2018, Best Baker in America premiered its second season on Food Network with Scott as the host. When Claudia was named Outstanding Pastry Chef by the James Beard Foundation in 2000, it was a well-earned recognition of the new chic, sophisticated, unfussy and casually graceful style she introduced - and continues - in her classically inspired, seasonal desserts and pastries.Claudia’s craft and approach to ingredients reflects the time she spent working in restaurants in New York (Jams, Union Square Cafe, Montrachet, TriBeCa Grill, and Gramercy Tavern) and in Paris (Fauchon). In 2005, Claudia along with her late husband, chef Gerry Hayden, left Manhattan to open The North Fork Table & Inn, in Long Island’s farm-filled wine country, living and working close to food producers. They set out to serve extraordinary food in a simply adorned, formal room, to create a dining experience like that found in the European countryside; and they succeeded. Claudia's exquisite book, The Last Course: Desserts from Gramercy Tavern, (Random House 2001), is prized by cooks and collectors alike. This week on All in the Industry, host Shari Bayer is joined in the studio by Tom Colicchio, chef and co-founder of the Gramercy Tavern in New York City. He is also the founder of other restaurants including Craft, Colicchio & Sons, Riverpark, 'Wichcraft, and the brand new Fowler & Wells in the landmark Beekman hotel. Colicchio is the recipient of five James Beard Foundation Awards for cooking accomplishments. He has been the head judge on every season of Bravo's Top Chef, as well as Best New Restaurant, which he also executive produces.
Tom appears in and served as executive producer on A Place at the Table, Participant Media's documentary about food insecurity in America, co-produced and -directed by his wife, Lori Silverbush. A Place at the Table, which premiered at the 2012 Sundance Film Festival and was released by Magnolia Pictures in 2013, has become the launchpad for a national movement centered on ending hunger in the United States.
Tom co-founded Food Policy Action in 2012 in collaboration with national food policy leaders, in order to hold legislators accountable on votes that have an effect on food and farming. He has also been an outspoken voice on issues like GMO labeling and the use of antibiotics in food sources, and he continues to lobby for better anti-hunger policies in America.

Shari Bayer is joined by Karen Goodlad, an Assistant Professor at City Tech CUNY specializing in food and beverage management. Recently she has taught Dining Room Operation, Wine and BeverageManagement, Internship and Perspectives in Hospitality Management. In addition to her joy of teaching she is often found working with students as the FacultyAdvisor to the Walt Disney World College Program Campus Representatives. Finding it important to continually increase her understanding of the teaching and learning practices that help students develop a joy for learning, she works as the Co-director of General Education for the Title V Grant, ALiving Laboratory. Here she facilitates seminars for full-time and part-timefaculty focused on incorporating High Impact Educational Practices, place based learning and effective assessment measures. As an industry professional, Prof. Goodlad has become a Certified Specialist of Wine with the Society of Wine Educators where she is also a member. This certification is evidence of her passion for expanding her own knowledge aboutwine and beverages but also her desire to effectively teach the subject. Prof. Goodlad is a member of Les Dames d’Escoffier the premier internationalorganization of women leaders in food, beverage and hospitality. Here she finds pleasure in working on various committees throughout the organization and is the Co-Director of the Scholarship Committee whereby she can help further the organization’s mission in support of education, advocacy and philanthropy. It is through all her work that she seeks to provide endless opportunities for students to pursue their passions and attain their goals.
