How are we different?

Full Recipe:

  • 1/4 cup Extra Virgin Olive Oil (EVOO)
  • 1 onion
  • 2 red or orange bell peppers
  • 2 potatoes
  • 8 eggs
  • 8 oz. cubed pancetta (optional)

Preheat the oven to 375 F.

Dice the potatoes into bite sized pieces. Soak the potatoes in water for about 15 minutes to pull out some of the starch, to make them less sticky. Drain and pat them dry. Spread out on a cookie sheet with one Tablespoon of EVOO or a piece of parchment paper. Bake for 20 minutes.

In a medium saucepan, sauté the pancetta over medium heat until slightly crispy, about 10-12 minutes. Drain and set aside.

In a large ovenproof pan, heat the EVOO over low-medium heat. Dice the onion and peppers. Add to the pan and sauté for about 10 minutes. Add the potatoes, pancetta, salt, and pepper to the pan. Continue to sauté for a few more minutes.

Preheat the oven to Broil.

In a separate bowl, whisk the eggs and season with salt & pepper.

Add to the large ovenproof pan. Cook on the stove for about 10 minutes on medium heat, gently lifting the edges to allow the uncooked egg to flow underneath.

Broil for just one minute to slightly brown the top.

Cut into wedges like a pizza. Served hot or at room temperature.

Part of your new years resolutions might have been how to be healthier or to just feel better. A new year brings new goals, resolutions, and intentions. Sometimes this relates to exercise, food, more quality sleep, or other nuggets of our day that could help us feel better.

If one of your goals is to eat better or to feel better, here are a few simple tips to help you get there....we will talk about several, but here are the top 2:

  1. Increase your water intake
  2. Try to get a least 7 hours of sleep per night. You may think you are getting more done by getting less sleep, but your body needs this recovery time. Your brain and your body will actually be more focused the next day if you allow it enough time to sleep.

I recently visited with Emmaly, Executive Director of Feed Iowa First. We talked about how buying local, like at your farmers markets, helps support their cause!

"Join our over 20 urban growing partners and turn the open land around your business, faith-based organization or school into productive farmland. Feed Iowa First wants to work with you! If you’re a private or commercial farmer, you can dedicate a portion of your existing farmland to grow fresh produce."

In 2017, Feed Iowa First donated over 38,000 lbs of fresh produce to pantries across Linn County. Feed Iowa First also helps support beginning farmers through training and investments that ensure the next generation of farmers and food production.

Their mission: “To combat food insecurity by growing food and farmers.”

“We believe health equity begins with food access; we work to meet the food needs of our community, simultaneously reducing waste by growing what is needed and wanted. We distribute more than 45,000 lbs. of fresh produce to economically disadvantaged households, immigrant and refugee families, and anyone in need through partnerships with local food pantries, health clinics, community fridges, and low-income apartments. Our model ensures households have consistent access to fresh and culturally appropriate produce to support nutrition security.“
