Gia's Italian Kitchen's Podcast

OMG.....Do you know Chef Joe Gatto?

This is the most amazing interview we have ever experienced!
I had the honor of talking with Chef Joe about his love for cooking, his passion for doing things “from scratch” his way, and his new podcast, Baking Bad.
You can watch the video interview on our YouTube channel.

Meet my new colleague! Boston-based Chef Joe Gatto is a private chef, culinary instructor, author and host of the TV show, “From Scratch”. Bringing his passion for scratch cooking, big personality and knowledge of film, he has helped create one of the most unique cooking shows out there. From making his own charcoal, hand forging his own knife, to milking cows to make butter and cheese, Joe goes all out to make an engaging, informative and fun show. Check out Chef Joe on his new podcast, Baking Bad, and on his WBUR radio show.

 2 tablespoons Extra-Virgin Olive Oil (EVOO)

 1 large onion

 2 eggplant

 2 yellow squash

 2-3 zucchini

 3-4 cups our homemade vegetarian tomato sauce (see our YouTube channel)

 1 pint of fresh whole grape or cherry tomatoes

Preheat the oven to 375 F.

In a large oven-safe pan, such as a cast-iron pan, add the EVOO. Slice the eggplant, squash, zucchini and onions into thin 1/4-inch rounds. Layer the vegetables in the pan, adding a little bit of the sauce about 1/2 way through. Layer the rest of the vegetables and the remaining sauce. Nestle the whole tomatoes into the dish.

Bake uncovered for 40-45 minutes.

Put the leftovers in the freezer, after it cools, for a delicious winter dish!
