E39: The power to heal through food with nutritionist and biochemist Karen Hurd
We are thrilled to bring you today’s guest, nutritionist and biochemist Karen Hurd.
In today's conversation we dive into Karen's powerful personal story about how she saved her daughter's life from organophosphate (household pesticide) poisoning by researching, studying and implementing her own program to save her little girl's life.
Choosing to employ the alternative method of nutrition, she began to administer a plan for healing using the knowledge she had gained through her research. Much to the amazement of the doctors, her daughter began to improve. Within six weeks, her daughter had made such improvement that there were no more measurable signs of distress. The only question remained if any permanent neural damage would be manifest as she grew older. Her daughter is now 31 years old, with no signs of permanent neural damage or any other damage.
We also discuss beans (and how they help remove toxins from the body), fiber, the "s" word SUGAR, hormones, and so much more. You will not want to miss this very moving and powerful episode.
Karen is a graduate of the American Academy of Nutrition (now called Huntington College of Health Sciences) and completed her coursework in Comprehensive Nutrition. This institution is accredited by the Accrediting Commission of the Distance Education and Training Council (DETC), which is listed by the U.S. Department of Education as a nationally recognized accrediting agency. She received her Master of Science in Biochemistry from the University of Saint Joseph in December 2017 and is currently enrolled at The George Washington University in the Master of Public Health program. Karen holds a Bachelors of Arts degree in Languages (Spanish as a major, German as a minor) from Truman State University, graduating in 1980 Summa Cum Laude. She graduated from Kirkwood High School in 1976 ranking in the top 1% of the graduating class of over 600 students. Upon graduation from college, Karen entered the U.S. Army and served four years as an officer in the Military Intelligence Corps. During this time she completed the Officer's Basic Course, the Electronic Warfare Course, and graduated from the Nuclear, Biological, and Chemical Defense course as the Honor Student. She received the Army Commendation Medal for outstanding service upon completion of her tour of duty. In 1984, she resigned her Regular Army commission to raise her family. She completed her time in service holding the rank of Captain. Karen has been married to her husband, Steven, for 42 years. They have five children, ages 26 through 35 years. They reside in Fall Creek, Wisconsin.

Practicing for 30 years, Karen's philosophy in approaching health is that of Hippocrates (the father of modern medicine) when he said "Let food be thy medicine, and thy medicine be food." Karen applies her knowledge at the biomolecular level to understand the cause of the health problems we face and what dietary and lifestyle changes are needed to correct that cause and unlock our best health.
