In this episode I am joined by Hector, Jaime and Hiram from Los Angeles. We also welcome back the Queen of BBQ, Alma Vera. We start with out Joe review of the Jake Paul and whether we thought the fix was in. Things go off the rails when the gang predicts he will fight a donkey in his next fight. We talk about the next upcoming barbecues in the following months and which we predict we will compete in.

Jaime gives a barbecue review on a local bbq restaurant called Ace's BBQ. He orders a barbecue botana for 4 people. The botana was a pizza box filled with chips and nacho cheese topped with 3 smoked meats. He also provides a review on another local restaurant where he went to have a chicken fried steak.
I give Yuengling beer another try with their light beer offering since most of the team prefers the light stuff these days. We are still not blown away with our reviews. Hiram wants to know the best way to present brisket to someone who has not tried your brisket before. Hector's answer might surprise you. We also give a review of what we think of the snake method of lining up your charcoal in a barbecue pit. We play a game called was it a cookoff or tailgate as I present scenarios of stories and the team guesses if it was a cookoff or a tailgate.
In honor of Hector's birthday we talk about what we remember from our 21st birthdays and reminisce about the first time we drank or got drunk. Hector takes over the red carpet as he tries to play matchmaker for Hiram and Kaley Cuoco.

Ep. 36 - Smoke Crafters & Sausage Making

In this episode we are on location as we do a remote podcast from Smoke Crafters Barbecue (Awesome location). I am joined by Jaime, Hector and Johnny as we sit down with our friend Jaime (Co-owner of Smoke Crafters. We start by talking a little football as we ask Jaime about his fandom between the Cowboys or Texas. Jaime argues that the Cowboys have the best offense in the NFL. Hector may beg to differ.
We then discuss the feast we just finished before recording. We had a spread of Brisket Waffle fries, brisket mac & cheese, brisket sandwiches, carnitas sandwich, brisket street elote, two kinds of sausage, bread pudding, brisket burnt ends, and an oatmeal cream pie. Food was all great. Jaime gives us a little bit of history behind Smoke Crafters. From starting as a catering business, to a food truck to a full blown permanent location. He gives our fans some tips on cooking barbecue.
We talk about making sausage. We tried the Jalapeno Cheddar sausage and an Italian sausage with marinara sauce. We ask for some advice on how we can make our own sausage and some dos and don'ts. He gives us some examples of some exotic recipes that he's played around with. We are a little surprised about how much work goes into making your own sausage.
We finish off by talking a little movie night as Smoke Crafters will on occasion host their own movie nights. He tells us about some up coming movies they plan to show during Halloween and some plans for expanding the location.

Hiram gives us the low down on Taylor Swifts new tour as I bring up a class at UT Austin that just breaks down her lyrics.

We were able to cook 50 wings at one time with this awesome pit and it stayed super-hot the whole time. BBQ Time - We cook up some beef ribs for the Texas game. Eric puts a little twist on them as he adds some apple habanero barbecue sauce. Game changer. We also cook up some mollejas and as Hiram how often they eat them in LA. No Surprise at the answer he gives us. Jaime still can't comprehend how vegans don't want to eat meat. Hiram tries to explain how they value living animals but some are cool with eating fish because fish are dumb and it's ok to eat dumb animals. Our buddy Jorge cooks a suckling whole pig and sends us pics. That leads to a whole conversation about cooking and eating animals with their face showing.

We give a recap of the Texas Cook'em High Steaks in Edinburg. We were very happy with our spot this year once again but again some of the cooks did not have it as good as us. Who has it better than us....nobody. I then give a recap of the results and we have one very good call but a disappointing day overall. Everyone forgets to bring an ice chest as we try to find ways to keep our meet, 80 water bottles cool and most importantly our beer. Johnny's tents don't survive the windy day. We talk about the new set up and how we enjoy the new location. Then we get into the SCA (Steak Cookoff Association) portion of the cookoff. As always Brett ran an A+ show but we bring our Mickey Mouse operation to the competition. Hear about the huge mistake we make that could have cost us some big money.

We talk about the lack of steak cookoffs in South Texas and how it would look like if it was just a steak cookoff. We think that more backyard guys and joes could possibly compete if it was only a steak cookoff. We ask the questions to the joes to see what they think.

He also takes a look at the menu and once again not happy about it. His experience at Smoke Crafters BBQ in Mission Texas makes him question how this Austin eatery can be so popular if it doesn't even compare. I guess ignorance is bliss.

I tell the guys about my experience at the Sizzling on the Tropics Cookoff in McAllen. This has become a frustrating event for us as we attempt to reach the top of the mountain every year. This year was even more difficult as we cooked in over 100 degree temps. We were also short handed as we try to turn in the comp entries as well as serve all of the people that showed up to the event. In the end we had some great calls but fell short of the ultimate prize. We end the night with a bbq pit on fire and burned chicken wings.

In this episode I am joined by Jaime and Hiram (virtually) as we talk a little bit of Cowboys football as the rollercoaster ride continues as they keep us on the ropes whether they are a great team or a so so team. Jaime is barely hanging on to the band wagon. We also talk about the fight between Crawford and Porter and did Porter's dad throw him under the bus? We debate who the best pound for pound fighter is. I stop by GW's BBQ and Catering once again to enjoy some breakfast barbacoa. Hiram attempts to practice cooking steak and admits he needs some help.
My attempt to cook a Thanksgiving meal outdoors was a success but not without a few hick ups. I attempt and execute a menu of smoked turkey, mac and cheese, scratch green bean casserole, jalapeno cornbread and sausage stuffing. I talk about what went right and some things I would change if I had to do it all over again. They guys talk about what they have planned for Thanksgiving and Hiram has a birthday party planned the day before Thanksgiving.
I had my Thanksgiving meal early because I plan to travel to Austin on Thursday. We talk about some of the places we remember eating during our time in Austin and some of our visits. We end up mostly talking about places we ate at 2am after a night out. Jaime talks about his experiences working at Walmart on a Black Friday. He coins a term that would make Urban Dictionary blush.
We talk a little bit about wrestling and the steroid controversy in sports. Hiram doesn't think the Rock is "All Natural". We talk a little bit about movies, specifically the ones that wrestlers star in. Hiram throws Derek Jeter under the bus but we respect his game and a dude. Hiram gives us some more details on his 20s Gatsby party he plans to have for his birthday. His bar plans to all dress up and have a 20s theme style party with prohibition drinks and old movies on the tube. Happy Birthday Hiram!!

BBQ Time - I tell the guys about a new twist on surf and turf that I tried out. I saw this on Jess Pryles's page and used all of her products for this. I tried the new Hardcore Carnivore sausage links with shrimp on a skewer seasoned with her Hardcore Carnivore seasoning. Super fan Eddie likes what I did and did his own level 100 twist on this dish. Totally one upped me on this one. Jaime gives some props to Juniors as we tried their fajitas for the first time. Solid selection with very little effort and no added seasoning. Hiram tells us about a Gucci party he attends in the Hills for the second year in a row. You'll have to tune in to hear about the spread they had along with live music and views of the Hollywood sign in the hills. I talk about practicing some ribs as the American Royal cookoff nears.
