In this episode I am joined by Hector, Jaime and Hiram from Los Angeles. We also welcome back the Queen of BBQ, Alma Vera. We start with out Joe review of the Jake Paul and whether we thought the fix was in. Things go off the rails when the gang predicts he will fight a donkey in his next fight. We talk about the next upcoming barbecues in the following months and which we predict we will compete in.
There is still time to enter into the context with Elda's Kitchen. We are announcing 3 winners who will each win a 3 pack of Elda's Kitchen's top selling sauces. Just tag 3 people on our post.

Jaime gives a barbecue review on a local bbq restaurant called Ace's BBQ. He orders a barbecue botana for 4 people. The botana was a pizza box filled with chips and nacho cheese topped with 3 smoked meats. He also provides a review on another local restaurant where he went to have a chicken fried steak.
I give Yuengling beer another try with their light beer offering since most of the team prefers the light stuff these days. We are still not blown away with our reviews. Hiram wants to know the best way to present brisket to someone who has not tried your brisket before. Hector's answer might surprise you. We also give a review of what we think of the snake method of lining up your charcoal in a barbecue pit. We play a game called was it a cookoff or tailgate as I present scenarios of stories and the team guesses if it was a cookoff or a tailgate.
In honor of Hector's birthday we talk about what we remember from our 21st birthdays and reminisce about the first time we drank or got drunk. Hector takes over the red carpet as he tries to play matchmaker for Hiram and Kaley Cuoco.

Ready Set BBQ Podcast - Ep. 36 - Smoke Crafters & Sausage Making

In this episode we are on location as we do a remote podcast from Smoke Crafters Barbecue (Awesome location). I am joined by Jaime, Hector and Johnny as we sit down with our friend Jaime (Co-owner of Smoke Crafters. We start by talking a little football as we ask Jaime about his fandom between the Cowboys or Texas. Jaime argues that the Cowboys have the best offense in the NFL. Hector may beg to differ.
We then discuss the feast we just finished before recording. We had a spread of Brisket Waffle fries, brisket mac & cheese, brisket sandwiches, carnitas sandwich, brisket street elote, two kinds of sausage, bread pudding, brisket burnt ends, and an oatmeal cream pie. Food was all great. Jaime gives us a little bit of history behind Smoke Crafters. From starting as a catering business, to a food truck to a full blown permanent location. He gives our fans some tips on cooking barbecue.


We talk about making sausage. We tried the Jalapeno Cheddar sausage and an Italian sausage with marinara sauce. We ask for some advice on how we can make our own sausage and some dos and don'ts. He gives us some examples of some exotic recipes that he's played around with. We are a little surprised about how much work goes into making your own sausage.
We finish off by talking a little movie night as Smoke Crafters will on occasion host their own movie nights. He tells us about some up coming movies they plan to show during Halloween and some plans for expanding the location.

Ready Set BBQ Podcast - Ep. 46: Chillin, Grillin & Starting a Comp BBQ Team

In this episode we do a remote podcast from the headquarters of Chillin n Grillin. I am joined by Jaime, Hector, Hiram (in person) Johnny, Eddie and Phil. We start by talking about the excellent barbecue that Eddie prepared for us before the podcast. We had beef and chicken fajitas, jalapeno poppers, pork riblets, mollejas, nopales, and just about every type of dip and salsa you can think of. Needless to say we all ate well.
We start to talk about the differences between IBCA and CBA cookoffs. (The two available in South and most of Texas). Before we dig too deep we call in the other half of Chillin and Grillin, our compa Mario. Though we can all agree that we like CBA's new system, Mario misses the old days of only having to cook Pork Butt as one of the main categories. CBA now has 4 turn in meats made up of Brisket, Ribs, Chicken, and Pork Butt while IBCA still has the same 3 meats minus the pork butt. None of us can make sense of the comments on the new scoring system but Jaime, having judged sheds some light on that subject.

We get a little surprise by the Jaime Daddy as we are trying to pay some bills. Jaime passes around some holiday gifts and we present a brand new Ready Set BBQ cap to our #1 fan.
We answer some questions from our fans in our Ready Set Q's segment. One joe wants to know how much financially it takes to start a competition barbecue team. We share the perspective from 4 different experiences from competition cooks on the podcast. The numbers range from a few hundred dollars to $80,000. Another caller (my sister Evee) wants to know how she can cook chicken and it still be moist. Everyone has a different opinion on this one from temperature probing, to indirect cooking, marinating, and brining, I guess it's choose which works for you. I think they all work if done right.

The Tropics cookoff is a little different as the turn in will be at night. Once again HEB will step it up for this event. We will have guest on next week to promote and discuss some of the behind the scenes of the Texas Cook'em High Steaks in Edinburg. In this episode I am joined by Jaime, Isaac and Rudy. We start by talking about the Dallas Cowboys who are not as all the way back as everyone thought. They lose a big lead in the 4th against enemies of the podcast, Green Bay Packers and cry baby Aaron Rodgers. Another one of our favorite was not so lucky to even have a lead as they don't event show up at home. You may have guessed it, the Texas Longhorns. Jaime gives a recap of the recent UFC fights which were surprisingly entertaining. We close out the headline with some Tom Brady talk and some more details about his super public divorce.

BBQ time: The Queen of BBQ shows up over the weekend with a ton of meats to cook for the Longhorn game. The game wasn't so great but the eats were. She showed up with two giant marinated sirloins steaks. Some of the biggest I've ever seen. In addition we also had some huge loaded ribs, fajitas, and bacon wrapped jalapenos. Needless to say there were plenty of leftovers. Isaac tells us about the briskets he cooked for work on his Masterbuilt charcoal gravity smoker. He give us some detail on how the smoker works and how he cooked the briskets. I also cook two briskets for a friend on my Pitmaker safe and also share some Joe tips and cooking methods. Johnny and I take Rudy to GW BBQ for Veteran's Day,. It was his first time there and he was blown away by the food quality and serving portions. Johnny and Alma cook for a local election party.

Rudy gives us a lesson on Cryptic creatures, no not Crypto which is just as scary as of late, but creatures like Dog Men, Warewolves, Chupacabras and other legendary creatures that have scared people for many centuries.

We close out talking about some local election results which quickly takes a trip down the rabbit hole and we end up talking more about the nastalgic memories of how we used to listen to and buy music. It's a blast from the past for those that grew up in the 80s and 90s.

We dived into the world of movies. We talked about the Flash movie and the old cameos that we can expect to see. We ask Chap GPT who are the top 5 Catwoman actresses from all the past Batman movies animated or live. We then expand on the best Batman, Joker and WWE divas.

Finally, in the last segment of our podcast, we talked about Tik Tok cottage cheese ice cream. We explored the unique recipe and discussed its taste and texture.

We get into some bbq talk as I share my experience from the Outdoor BBQ Grillers cookoff over the past weekend. It was a hot one over 100 degrees. There was a small grass fire that had all the barbecue teams turn into amateur firefighters. They guys save the day as disaster is avoided. Hiram wants to know why sausage can't be a cookoff category. He also shares a story about some Texas Style bbq he has in LA and he was not impressed by what he had.

Jaime Daddy joins the party from Hawaii. We have 3 different time zones going on this podcast. I ask the guys a question, with meat prices going up what is their cheap bbq shopping list. We circle back to the cookoff and talk about the dad bod contest. Jaime rides in the middle seat all the way across the Pacific. Jaime talks about a Luau that he attended. He also plays a round of night golf. Jaime then gives a review of Dixieland BBQ and does not have very good things to say about it. In fact he compares it to garbage.

We go Behind the Red Curtain as I share a story in California about a driverless cab that gets pulled over by the cops and they proceeds to drive away as the cops walk up to the car. Charging the stage makes the news again as Dave Chapelle is approached at a stand up comedy show. We talk about the new Top Gun movie coming out and all agree that we do not like Miles Teller for no other reason than he has a punchable face. Jaime closes out the show talking about cooking on a gas grill for his family.
