Today’s Recipes: Strawberry Bites and Oatmeal Cookie Fruit Pizza
Strawberry Bites
Ingredients:
- 12 fresh strawberries
- 12 small pieces of Brie cheese
- 12 basil leaves (preferably Thai basil)
- Toothpicks
- Balsamic glaze (store-bought or homemade)
Instructions:
- Prepare the Strawberries:
- Wash and dry the strawberries.
- Insert a toothpick through the side of each strawberry, making sure it's secure and not top-heavy.
- Add the Basil Leaf:
- Thread one basil leaf onto each toothpick, placing it next to the strawberry.
- Prepare the Brie Cheese:
- Cut the Brie cheese into small pieces.
- Place each piece of Brie into a small candy paper to help it hold its shape.
- Assemble the Bites:
- Attach a piece of Brie cheese to the toothpick, securing it with the strawberry and basil.
- Add Balsamic Glaze:
- Drizzle balsamic glaze over each assembled bite.
- If making your own glaze, reduce 1 cup of balsamic vinegar over medium heat in a small saucepan until it reduces to about 1/4 cup (10-14 minutes).
- Serve:
- Arrange the strawberry bites on a pretty plate for presentation and enjoy!
Oatmeal Cookie Fruit Pizza
Ingredients for the Oatmeal Cookie Base:
- 1 1/2 cups oats
- 1 cup whole wheat flour
- 2/3 cup packed brown sugar
- 1/3 cup oil
- 1 egg

- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 tsp baking powder
- 1/2 tsp baking soda

- 4 oz cream cheese
- 1/4 cup yogurt
- 3 tbsp powdered sugar
- 1 tsp vanilla extract
- Assorted fruits: strawberries, blueberries, kiwi (or any fruit of your choice)
Instructions:
- Prepare the Oatmeal Cookie Base:
- Preheat your oven to 375°F (190°C).
- Mix the oats, whole wheat flour, cinnamon, salt, baking powder, and baking soda in a bowl. Set aside.
- In another bowl, mix the brown sugar, egg, oil, and vanilla extract until well combined.
- Combine the wet and dry ingredients until just mixed; the mixture will be slightly crumbly.
- Spread the mixture onto a parchment-lined baking stone or cookie sheet, shaping it into a 10-inch round cookie.

- Fresh cracked pepper, to taste
- 2 cloves of garlic, minced
- Pinch of salt, to taste
- 1⁄4 cup basil leaves
- 1⁄4 cup Parmesan cheese
Instructions:
- In a bowl, combine the olive oil, soy sauce, brown sugar, fresh cracked pepper, minced garlic, and a pinch of salt. Mix the ingredients well to create the marinade.
- Add the sliced green tomatoes to the marinade, ensuring they are evenly coated with the sauce.
- Preheat the grill and use a grilling rack to protect the vegetables during grilling.
- Grill the coated green tomato slices until they are cooked to your desired level of doneness. Remove from the grill once they are done.
- In a serving bowl, layer the grilled green tomatoes.
- Sprinkle the basil leaves over the tomatoes for a refreshing herb flavor.
- Add the Parmesan cheese on top to enhance the taste.
- Serve the grilled green tomatoes as a delightful side dish or as a topping for hamburgers.
- Enjoy your grilled green tomato creation!

Avocado Toast with Mixed Baby Greens:
Ingredients:
- 1 ripe avocado
- Slices of your preferred bread (2-4)
- Mixed baby greens (spicy and regular)
- Cilantro (optional)
- Sea salt
- Cracked pepper
- Balsamic glaze
Instructions:
- Cut the avocado in half, remove the seed, and scoop the flesh into a bowl.
- Smash the avocado with a fork until you achieve your desired consistency.
- Toast the bread slices.
- Spread the smashed avocado evenly on the toasted bread.
- Layer mixed baby greens on top of the avocado.
- Add a pinch of sea salt for flavor.
- Optionally, sprinkle cracked pepper or red pepper for added spice.
- Drizzle balsamic glaze over the avocado toast.
- Serve and enjoy this fast and easy snack or meal!
Baby Greens Rice Salad with Toasted Almonds and Golden Raisins:
Ingredients:
- 1 cup wild and brown rice blend
- 1/4 cup golden raisins (soaked for 2 hours)
- 2 tbsp olive oil
- 1 small red onion (sliced)
- Slivered almonds
- 1 green onion (chopped)
- Mixed baby greens
- Sea salt
- Dill (optional)
- Lemon (for squeezing)
Instructions:
- Cook the wild and brown rice blend according to package instructions, fluff with a fork, and let it cool.
- In a pan, heat olive oil and sauté sliced red onions until tender.
- Add slivered almonds and soaked golden raisins to the pan, toasting them for added flavor.
- In a large bowl, mix the cooled rice, sautéed onions, toasted almonds, and golden raisins.
- Add chopped green onions and mixed baby greens to the bowl.
- Optionally, sprinkle dill for added freshness.
- Drizzle with olive oil, squeeze lemon juice, and season with sea salt to taste.

Today’s Recipe: Lime Fruit Salad
Ingredients:
- 1 cup blackberries
- 1 cup pomegranate seeds
