Building a brand = Jump off the cliff and build the plane on the way down
“there are no set rules to build a challenger brand”
Will and Josh, from Willy’s Pies live and breath those adages
Brash oblivion confidence -
mixed with naive intelligence
- tempered with a big ol’ dose of cynical pragmatism good humour
Willy’s Pies is the wonderful story of
action = momentum.
momentum = magic.
magic = more momentum = more magic.
Will, a chef at BRAT and St. John was furloughed, for long, he made taste-tantalising pies.
Will pie-peddled on pie-purveying bike around East London during Lockdown.
Josh, The Operator, joined Will in 2021, from double glaze windows to take Willy’s NEXT LEVEL
4 years later
- Launched and got it wrong at Watford Football Club (tonnes of learnings here).
- Secured Ian Wright as a key investor, collaborated with wagamama,
- Won HUGE BRANDED listings at Arsenal Football Club, Fulham & Football Clubs
- Launched into Ocado
Deeply believe Willy’s Pies are the NEXT BIG challenger brand.

- Why Willy’s East London Early Adopters Were A Super Power Until They’re Not - constantly think House Hold Brand from the Jump

Me loves me’s a-bitta Kricket.
A raucous rollercoaster of Mumbai-melting, Bombay-bouncing, spice-slapping flavour
Bowls you over.
Smacks tastebuds for 6.
Often, with my brother, we roll up, hunker down, nestle in, zonk out at their Brixton site: unadulterated gluttony erupts.
And, the name, Kricket - I think - maybe - is one the greatest brand names of all time.
Cricket, the sport, played in England and India.
Marries the two countries.
Kricket, the restaurant, combining British Ingredients with the flavours and aromas of India.
And, the “K” is so iconic.
to me it represents
doing things differently
questioning everything.

Ever wondered what it takes to run a top-rated gastropub? Brendan from The Unruly Pig breaks down why Michelin-starred restaurants often struggle to make money, dealing with sky-high costs for fancy ingredients and skilled chefs. What's super interesting is how they've cracked the code at The Unruly Pig. While fancy Michelin spots might serve 45-60 people on a Saturday night, they're pumping out 100-120 covers. But here's the clever bit - they've actually simplified their menu over time, focusing on doing fewer dishes really well instead of trying to please everyone.
It's a brilliant look at finding that sweet spot between high-end dining and running a profitable business, all while keeping the locals happy and attracting food tourists from across the country

============= ON THE MENU =============
- Michelin-level quality comes with high costs: High labor costs for skilled chefs and expensive ingredients make it difficult to be profitable at the Michelin-star level
- Volume vs. quality balance: While Michelin restaurants typically serve 45-60 covers on a Saturday night, The Unruly Pig serves 100-120 covers while maintaining high quality
- Menu simplification is crucial: They learned to reduce menu size over time to maintain consistency and quality, rather than trying to please everyone
- Customer flow management: Controlling the flow of orders and not overwhelming the kitchen is essential for maintaining quality
- Local focus with tourist appeal: While they attract food tourists as the #1 gastropub, their core business relies on local Suffolk customers and London weekend visitors

Last week, I interviewed the fantastic and knowledgeable Zoe Howorth for Episode 4 of ManiLife Conversations.
Zoe has 23 years of experience working for World-leading brands at Proctor & Gamble and Coca-Cola. Recently, Zoe's moved to a Non-Ex role at SME brands in different industries: Water Babies, Houston PR and Play Finder.
Giving Zoe a very unique and holistic view of what makes Great Brands and successful businesses.
My goal with the episode was to unpack Big Brand Lessons that small Challenger brands could implement immediately to accelerate their growth.
The episode DID NOT disappoint, it was tremendously insightful and super fun.

How Challenger Food and Drink Brands can scale from £0-£1 million sales - Mark Palmer, co-founder Cawston Press, L.A. Kombucha, ex-Marketing Director Green & Blacks
“The SINGLE HARDEST challenge for food and drink brands is going from £0 to £1 million sales”
Mark Palmer told me on our first podcast, several months ago.
I scribbled down the sentence on my coffee-laden notepad with “Round 2” next to it.
A carousel of questions percolated my mind over the past few months.
Last week, I was fortunate to interview Mark again, my questions answered, my expectations -MASSIVELY surpassed.
ON TODAY’S MENU:
1. Why Cawston Press ripped up their business model and started again - structural margins fuel growth.
2. Sampling in the early days: Quality of Contact > Quantity of Contact = Deeper Connection
3. When you find your “Surprising Success” quadruple down
4. Different formats/salespeople for different channels/occasions.
5. The Top "3 Must-Haves" for brands seeking investment from Mark.

Pressure. Perfection.
Stress. Suffering.
Teamwork. Trust.
Authentic Creativity.
Delicious leadership lessons bubble in the kitchen and spill in the board room.
Leading a brigade of chefs or challenger brands are the same.
The latest guests on HUNGRY. are James Cochran and Dan Henry.
James’ career sparkles:
- Worked under Bret Graham at The Ledbury, taking it from a 1 to 2 Michelin Star * - becoming the 11th best restaurant in the world.
- Head Chef of The Harwood Arms, London’s ONLY Michelin Star pub.
- James and Dan, co-founded the restaurants 12.51 and Around The Cluck.
- Creating an INSANE Scotch Bonnet Jam product with the legends Pam Digva and James Digva - listed in 500+ Sainsbury's stores.
The biggest lesson?
The Art of Simplicity.
Humans convolute EVERYTHING, adding more and more.
BUT.
The best strategy?
SIMPLICITY.
Our conversation rifled home a quote I love: SLOW IS SMOOTH. SMOOTH IS FAST.
Slowing down allows, Simplification.
Simplicity = Speed.
