No reservations required and put your Benjamins away. You're Dining Out with Bruce Newbury. Join me at the table at the amazing Waybury Inn in Middlebury, Vermont with new chef Tony Petri. We're tasting a couple of new menu additions - Pomegranate glazed salmon atop celeriac mash alongside confit fennel and celery and grape salad w pine nuts and Chicken harissa – airline breast over red harissa aioli sauce w fresco peppers and Middle Eastern spices and a crust of Mediterranean spices w sesame and sumac cumin coriander and thyme over pearled couscous pineapple chutney topped w grilled carrots. As Chef Tony says a few minutes in, "That's gonna be a good bite!" You'll agree starting in early February when these items and others appear on the Inn's dinner menu. (But don't wait to make your rezzies for Valentine's Day!)
