So Cognac is definitely a spirit. Cognac falls into the category of brandy which is probably easier to understand. But not all brandy is cognac. So in order to be called cognac, it needs to be made from the AOC protected area.
Thérèse Bertrand as a child spent her childhood between Spain and France. She also spent her life with Cognac at the core to everything and despite some time away she has moved back to tackle the family business with her brother along with her husband and now has two sons.

Molly Wilkinson is a pastry chef trained at Le Cordon Bleu who left roles working in pastry shops in the USA to teach us pastry in her fabulous Versailles kitchen. That’s why I like to call Molly the princess of pastry.

I’m your host, Andrew Prior, enchantee. Ten years ago my life changed when I competed on MasterChef Australia and now I’m living my best French life in the French countryside. My life is all about cooking, eating and living life the best way I can. I love meeting wonderful food producers, chefs, home cooks, drinking amazing wines, eating some of the over 1500 French cheeses and sharing these fabulous experiences with you. I hope your enjoying them.

Today I’m having a chat with a wonderful and fabulous of course French chef based in Sydney Australia, Sebastien Lutaud. Originally from Lyon he moved to Australia at a young age with his family who had patisseries in Australia. Then he moved back to France to start his chef career and then back to Aus where he has a family and runs successful French restaurants. Sebastien is a great example of how French food can influence your life and how some of the founding fathers of French cuisine can influence a career.
