It's Three Kitchens Podcast's last episode of season 2! Erin's taking us down memory lane to enjoy a sweet treat we remember from our childhoods. She's made homemade pop tarts with strawberry rhubarb jam!
Erin made her jam with strawberries and rhubarb from her garden. Making a pop tart is as simple as a layer of jam baked between two layers of pie crust rolled thin. Top it with icing and sprinkles and you'll be transported right back to your childhood - except this is so much better than the store-bought tarts! Erin followed a recipe from the Half-Baked Harvest blog.
We're taking a little break and we'll be back with more new episodes in the Fall.

This week we're experimenting with different grilled cheese sandwiches! Who doesn't love a grilled cheese?? We sure do! But they can be a whole lot more than just bread and cheese.
Have you ever marinated the cheese for your grilled cheese sandwich? Well, when it comes down to it, you're really mixing the cheese with other flavourful things to amp up your sandwich game. Whether it helps to allow the cheese to "marinate" or not, is a question we really didn't answer. But either way, you cannot go wrong with these sandwich fillings.
Erin made three grilled cheese variations for us to try, all beginning with the base of home-baked overnight bread and aged white cheddar cheese:
1. caramelized onion and grainy mustard
2. sundried tomato, green olives, oregano, cumin, chilli flakes
3. red pepper relish and parsley
Our favourites, in order, were #2, #3 and #1, but you can't go wrong adding in whatever tasty things you enjoy with cheese. And speaking of cheese, you can mix that up too if you want to try different varieties. Have fun with it!

Bao! In this episode of Three Kitchens, Sarah's taking her love-hate relationship with cute steamed breads to the next level. They're not just adorable buns, they're delicious!
Bao is a yeast-leavened filled bun found in various Chinese cuisines. There are many variations in fillings (meat or vegetarian) and preparations, although the buns are most often steamed. Sarah has been playing with dough recipes, in a quest to find her favourite bao recipe, proofed to perfection. She filled her bao with two different fillings: General Tsao's Chicken and a Japanese curry.
And these are not just buns, they're adorably shaped creations with little faces and colourful designs. If you're feeling brave, get your food tweasers ready, folks! Or make yours super simple. Either way, they're delicious!

To kick off a brand new season of Three Kitchens Podcast, we're getting into an issue that can be a very real struggle for anyone cooking for kids: picky eaters!
Whether or not we parent them, we've all met kids who won't eat their veggies, or only want to snack, or are fearful of trying new foods. Our guest, Jennifer House, is a Registered Dietician and Nutritionist specializing in helping parents manage picky eaters. If you're a parent, grandparent, aunt, uncle or caregiver feeding kids, this one is for you!
Jen takes us through some of the root causes of picky eating, such as physical or motor skill issues, health concerns like iron deficiency, or (most commonly) behavioural and sensory issues. Throughout our chat, and by answering listener questions, she offers tips and advice like:

  • establish realistic roles, responsibilities and routines within the family when it comes to food (and yes, kids have responsibilities, too);
  • while it's difficult, parents need to trust their kids to know their own appetite and make some of these decisions for themselves (it is a power struggle, after all);
  • don't make the dining experience all about the food - put it in front of them and talk about other things;
  • dinner doesn't need to be the most important meal, if kids can get nutrients throughout the day (also, a multivitamin can help give peace of mind);
  • and much more!

A big thank you to Jen for joining us and sharing her wisdom and compassion for parents struggling with this aspect of parenting.

This week on Speakeasy, we're taking jell-o shots to the next level! You can impress your party guests - or be the most popular guest yourself when you walk through the door with a tray of these beauties!
Begin by hollowing out half a naval orange. Mix your drink with gelatin and pop it in the fridge to set. Then slice your beautiful up-scale jell-o shots!
For these shots, Heather mixed a New Orleans classic, the Hurricane cocktail. It's a blend of rums, fruit juices and grenadine to give it that vibrant colour.
3 oranges, halved
1/2 cup white rum
1/2 cup dark rum
1/2 cup passion fruit juice (or tropical fruit blend)
1/2 cup fresh lime juice
2 tablespoons simple syrup (1 part sugar to 1 part water, boiled until the sugar dissolves)
2 tablespoons grenadine
2 envelopes gelatin

  1. Run a paring knife around the inside edge of each orange peel to release the flesh. Using your hands, carefully remove the flesh from the oranges to make 6 shells. Squeeze enough of the flesh to make 1/4 cup of juice.
  2. Combine the white and dark rums in a small saucepan. Place over medium heat and bring to a simmer. Remove from heat and set aside.
  3. Combine the orange juice, passion fruit juice, lime juice, simple syrup, and grenadine in a bowl. Sprinkle the gelatin over the juice mixture and let sit for 1 minute. Pour the hot rum over the juices and whisk until the gelatin completely dissolves, about 5 minutes.
  4. Divide the hot juice mixture among the orange shells and chill in the refrigerator until the gelatin sets, about 2 hours.
  5. When ready to serve, remove the oranges from the refrigerator and cut each half into 4 wedges using a sharp knife. If you don't serve immediately, store them in the fridge.

Then we have a few firefighters tell us their experiences with planning meals, shopping and cooking for a hungry crew. If you've ever wondered who does the cooking, what they're eating, and what happens if firefighters have food on the stove when they get called out to an emergency, be sure to check out this episode. Their stories are a fun and insightful peek into the firehall kitchen.
And finally, we whipped up a sweet treat to thank our guests. We've got a No Bake Nanaimo Bar Cheesecake portioned and delivered in jam jars. It's a fun twist on a classic Canadian dessert. The jam jars make it easy to transport and it looks cute too!

We've been seeing beautiful baked goods made with ube - a purple yam - popping up in our Three Kitchens Podcast Instagram feed. These purple-hued goodies inspired Erin to try making the ube halaya (the purple jam used as the base for ube baking), and using it to make muffins and cookies.
As you might imagine, this sparked a lively discussion, more research, and plenty of confusion. Is what we find in our grocery stores really ube? Or is it a purple yam, or maybe a sweet potato? What we know for certain is that the muffins and cookies Erin baked were as delicious as they were beautiful to look at!
