Charging by the hour makes it so easy for people to compare your products and services to the competitors based on an hourly rate and not your true value. When that happens it often becomes a race to the bottom in price which is bad for your mindset, motivation, and bank account.
Charging an hourly rate will often also bring up money objections especially if you have a higher per-hour rate and creates issues as you often are forced to feel that you need to justify the price or amount of time that you take to complete something.
