Today’s ditch the drive-through is Razi’s Cilantro Lime Chicken and Rice. Take two chicken breasts, cover in olive oil, squeeze half of a lime over the chicken and then season with salt, pepper, garlic powder, paprika, onion powder and chili powder. Do yourself a favor and buy some disposable gloves so you can pop those on and mix the chicken up before cooking it in a pan on the stove.

To make the cilantro lime sauce place one third cup cilantro, one jalapeno without seeds, two garlic cloves, juice of half a lime, one third cup of plain Greek yogurt, one teaspoon of honey, and salt and pepper to taste. Blend.

In industry news, did Taylor Swift buy Travis Kelce a car? If you're in the market for buying new this year yourself, 2024 might be your year. New car inventory is up 36% over what it was in February 2021!

Ditch the drive-through steak bites for Febru-air-y comes from Stacy. Chop your steak in bite-sized pieces. Put them in a bowl with two tablespoons of oil, salt and pepper. Air fry 400 for four to six minutes.While they cook, heat up butter on the stove and add garlic. Add the cooked steak to the butter, top with parsley, and serve with a salad or your favorite Pillsbury Crescent rolls to have dinner on the table in 15 to 20 minutes.

And a bonus recipe, Ashley's Cowboy Cornbread Casserole, gets another mention: Brown your ground beef in a cast iron skillet (it must be a cast iron), add a can of Rotel, a can of corn, drained red kidney beans, and mix then pat down. Make cornbread according to the box directions then drop the mix all over the bean mixture. It doesn't have to be pretty! Bake according to the cornbread directions.

Jen is trying for her first baby and hauls around several teenagers with sports gear. What kind of car can she get to accommodate her busy family that will keep her under a $400-500 monthly payment? Kelly says the Honda Pilot might have just the versatility she needs.

In industry news the 2025 Kia Soul has been released and offers a Soulmate Special Edition. Leasing now makes up over 35% of EV transactions compared to 24% of transactions for all vehicles.

Crack chicken sandwiches are today's ditch the drive-through meal. All you need to get started is three chicken breasts, a block of cream cheese, pack of ranch dressing, and half a cup of water or chicken broth. Cook on low for eight hours then shred the chicken. To finish off the sandwich filling, add in eight ounces of shredded cheese, chopped cooked bacon, and chopped green onion. Serve on toasted brioche buns.

Kelly and Lizz are back on the mic with babes in tow and on the teet. Get ready for Lizz’s birth story, a newborn report, and an update on how the mom ‘Carpool’ is going for the St. Johns.

CALLING ALL JAMES MAMAS: Kelly and Lizz are mixing it up! If you have a baby named James show up in the Carpool Podcast reviews and give your babe a shout out.

Lizz’s labor started out subtle, but had her panicking in a hurry—about her messy house of course. At a routine weekly appointment she found out she was already dilating, but wasn’t having a stitch of contractions. The nurses were frankly no help in figuring out what was a big deal and how quickly to expect things to progress. Kelly votes for better delivery and a bit more sensitivity from the medical pros.

Mattie was at work, so Mama Stoupe stepped in to keep Lizz company and later hosted the expecting couple for the night closer to the hospital.

Lizz started having contractions throughout the next day while Mattie was at work and as they intensified they decided to head to the hospital.

Spoiler alert: back labor ahead!

Lizz opted for the epidural and pitocin and was cheered on by a birth team who said she’d have a quick 45 minutes of pushing before she met her baby. Not so! She finally made progress through back labor, epidural adjustments, and a variety of birthing positions, giving birth to baby James after 4 hours of pushing!

Baby James was born 7lb 130z, 22 inches long, and is absolutely perfect.
