This week on Inside the Headset, we are featuring Jersey Mike's Subs co-founder and CEO, Peter Cancro. Cancro discusses how his youth football coach helped him buy his first sub shop, the similarities between football and business, as well as the importance of giving back and impacting others.

In 1971, Peter Cancro was a high school student in Point Pleasant, New Jersey. He began working at Mike's Subs at the age of 14. When Peter was a senior in high school, he overheard the owner of Mike's Subs discussing selling the business. As an ambitious 17-year-old kid, Peter approached his football coach, who was also a banker, and asked if he could help him buy the shop. His football coach, Rod Smith came through for Peter, and backed his loan. At the tender age of 17 – before he was legally able to slice a sub – Peter Cancro became the owner and proprietor of Mike's Subs.

Shortly after buying Mike's, he opened a couple more local outlets. He expanded upon the phenomenon of Mike's Subs. In the mid-eighties, Peter began to realize people would come in at the end of 'summering' in Jersey and get several giant subs wrapped for travel, to carry back to their homes across the country. This got Peter thinking, and he started researching the possibilities of franchising. In 1987, 29-year-old Peter began franchising, however, he changed the name from Mike's Subs to Jersey Mike's Subs capturing the authenticity of where the sub sandwich was born.

Today, in his 45th year owning the business, Cancro oversees more than 2,000 locations. Despite the title, Peter still jumps behind the counter to demonstrate his passion for the product and the customer.

This week on Inside the Headset, we are featuring Chris Kappas, Head Coach at Lousiville HS (OH). Coach Kappas recaps his collegiate coaching career and his transition to the high school level. He also discusses his unique experience coaching on all sides of the ball and reflects on his selection as the AFCA FCS Assistant Coach of the Year.

Chris Kappas was recently hired as the next head football coach at Louisville High School in Ohio. Coach Kappas transitions to a high school coaching job after a highly successful coaching career with stops at Austin Peay, Bowling Green, and Mount Union. Coach Kappas has held coordinator jobs on all sides of the ball as the ST, DC, and OC at Mount Union at various points during his time on staff and a successful DC at Austin Peay. During his time at Mount Union, Coach Kappas led a consistent top 10 defense as well as at Austin Peay his group led the OVC as the statistical leader in many defensive categories. Due to his efforts this past season, Coach Kappas was named the AFCA FCS Assistant Coach of the Year.

This week on Inside the Headset, we are featuring Tiffin University Head Coach, Cris Reisert. Coach Reisert shares the importance of learning the opposite side of the ball, discusses his personal transition from player to coach, and goes into detail throughout his journey to becoming a head coach.

Cris Reisert is entering his third season as the Head Football Coach at Tiffin University. Tiffin officially claimed the conference championship title in 2020 with a perfect 6-0 mark, playing a spring season due to the Covid-19 pandemic. Reisert earned his second consecutive Great Midwest Coach of the Year honor with an undefeated run through the league standings to officially make it back-to-back trophies. During the 2019 campaign, Reisert led the Dragons to arguably the best season in program history. Tiffin finished the regular season 9-1 along with a perfect 7-0 mark in GMAC play to claim the conference title. As a result, the Dragons earned their first-ever berth into the NCAA DII playoffs.

Prior to Tiffin, Reisert served for two seasons as Ohio Dominican's offensive coordinator, helping to lead the Panthers to some of the top offensive numbers in Division II. Reisert directed one of the best offenses in the nation in 2017 as ODU led the country in completion percentage, passing efficiency and fewest turnovers committed, ranked second in third-down conversions, third in passing offense and fourth in total offense. Prior to that Reisert spent three seasons as the tight ends coach and recruiting coordinator at Elon University. Prior to working at Elon, Reisert spent the 2013 season as the assistant offensive line coach at Ball State University. As a four-year starter at quarterback for Ohio Dominican, Reisert set 10 NAIA passing records and was named the 2007 NAIA Player of the Year.

This week on Inside the Headset, we are featuring our Division II Coach of the Year discussion. The coaches recap this past season, reflect on key mentors in their life, and discuss the connections they have made through the AFCA.

The regional coach of the year winners for Division II are:

Region 1: Ernie McCook, Shepherd University

Ernie McCook recently completed his fifth season at the helm for the Rams after being named the head coach at Shepherd on January 24, 2018 after serving as an assistant at Shepherd for 18 years. McCook led Shepherd to a 13-2 record in the 2022 season. McCook led Shepherd to a 10-3 mark and an NCAA II playoff appearance in its first season of competition in the Pennsylvania State Athletic Conference (PSAC) in 2019. Prior to becoming head coach he served as offensive coordinator for nine years and was offensive line coach for 10 years for Shepherd from 1999-2008. McCook was elevated to assistant head coach in 2007. He spent the 2009 season as the run game coordinator/tight ends coach at Liberty University before returning to Shepherd the next season. McCook served as assistant head coach/offensive coordinator at Shepherd from 2010-17.

Region 2: Chennis Berry, Benedict College

Chennis Berry was named head football coach at Benedict College on February 11, 2020 and wrapped up an 11-1 season with a SIAC championship. Berry came to Benedict after serving as the Assistant Head Coach and Offensive Coordinator at Southern University. During his seven seasons with Southern, the Jaguars had a winning record every season, while the offense under his direction set numerous school and SWAC conference records. As part of the NFL’s Minority Internship Program, Berry has interned with six different NFL teams, including the Jacksonville Jaguars, Indianapolis Colts, Cleveland Browns, Detroit Lions, San Diego Chargers and Chicago Bears.

Region 3: Matt Mitchell, Grand Valley State University

Matt Mitchell was recently hired at Wisconsin on Jan. 23, 2023 as the coach of the outside linebackers and special teams units. Mitchell joined the UW staff after 13 years as the head coach at Grand Valley State. Coach Mitchell helped establish a winning culture during his time at Grand Valley State, with an impressive record of 117-31 (.790) over 12 seasons of action. He guided the Lakers to seven NCAA DII Playoff appearances, two NCAA DII National Semifinal appearances, three GLIAC Championships, three GLIAC North Division titles, and two undefeated regular seasons.

Region 4: Todd Knight, Ouachita Baptist University

Todd Knight has recently completed his 23rd season at Ouachita Baptist University and was named the 2023 AFCA president. Coach Knight is the longest-standing college head football coach in Arkansas. He has led the Tigers to 16 winning seasons, and is currently at the helm of 14 consecutive winning seasons, the longest current streak of any team in the state of Arkansas at any level. He has led the Tigers to six Great American Conference championships, five NCAA Division II playoff appearances, and four undefeated regular seasons.

Region 5: Brandon Moore, Colorado School of Mines

Brandon Moore was named the head coach of Mines Football on Jan. 31, 2022 after spending six years on staff building the Oredigger defense into one of the nation’s top units. Moore’s first year as head coach was historic as the Orediggers made their first-ever appearance in the NCAA Division II Championship Game. Mines won 13 consecutive games between September and December to get there, winning the program’s second consecutive NCAA Super Region IV title and fourth consecutive RMAC championship along the way. Going 13-3, the Orediggers set a program record for wins and they completed just the third undefeated RMAC season (9-0) in the modern era. Coach Moore was named the NFFCC Colorado and RMAC Coach of the Year due to his success.

This week on Inside the Headset, we are featuring Coastal Carolina Head Coach, Jamey Chadwell. In this episode, Coach Chadwell talks about maintaining success with increasing public expectations, details the value of keeping a coaching staff intact, and shares how he approaches recruiting and roster management in the transfer portal era.

Jamey Chadwell is entering his fourth season as the Head Coach of the Coastal Carolina Chanticleers. In just three seasons, Chadwell has built Coastal into one of the best teams in the Sunbelt Conference with back-to-back 10+ win seasons and a conference title in 2020. The 2020 season marked Coastal Carolina’s first-ever undefeated regular season and the first time that the Chanticleers were ranked in either the Associated Press Top 25 Poll or the AFCA Coaches Poll. Due to his success in the 2020 season, Chadwell racked up over 10 coach of the year honors including the AFCA FBS Region 2 Coach of the Year and Sun Belt Football Coach of the Year.

Prior to taking over as the head coach of the Chanticleers, Chadwell served as the offensive coordinator and quarterbacks coach for Coastal Carolina. Chadwell came to Coastal after four seasons as the head coach at Charleston Southern. He was named Big South Coach of the Year three times (2013, 2015, and 2016), led CSU to conference titles in 2015 and 2016, and guided the Buccaneers to the NCAA Division I FCS Championship Playoffs in both of his last two years. Chadwell, a former Buccaneer assistant coach, returned to CSU after head coaching stops at Delta State, going 3-8 in his lone season (2012), and North Greenville, going 22-14 in three seasons (2009-11).

This week on Inside the Headset, we are featuring the 2021 AFCA Regional Power of Influence award winners. These coaches include Lou Marinelli from New Canaan High School (Conn.), Gary Rankin from Boyd Buchanan High School (Tenn.), Jake Gilbert from Westfield High School (Ind.), Bill Blankenship from Owasso High School (Okla.) and Tim Brennan from Bishop Kelly High School (Idaho).

Lou Marinelli has been the head coach for the New Canaan Rams for 40 seasons and has a record of 349-103-6. If you include his other stops at Mamaroneck (N.Y.) High School and Yorktown (N.Y.) High School, his overall record stands at 368-110-7. After lettering in football at Springfield College, Marinelli began his coaching career at Mamaroneck in 1976. He moved to Boston College as an assistant coach for two years before returning to the high school ranks in 1979 at Yorktown. After two seasons, Marinelli began his New Canaan run in 1981. After going 4-5 in his first season, he brought the Rams the first of 12 state titles in 1982. New Canaan’s other state titles came in 1993, 2001-02, 2006-09, and 2013-16. The winningest head coach in Connecticut high school football history, Marinelli’s trophy case is full of awards that he has won over the years, including the Fairfield County Interscholastic Athletic Conference (FCIAC) Coach of the Year several times, National Football Foundation Coach of the Year, Walter Camp Football Foundation’s Connecticut Coach of the Year, Connecticut High School Coaches Association Coach of the Year, the Legendary Coach Award by MSG Network, and National Football League Coach of the Year in 2008, to name a few. Marinelli has been inducted into the Connecticut High School Hall of Fame, FCIAC Hall of Fame, Fairfield County Sports Hall of Fame, and the Springfield College Athletic Hall of Fame.

Gary Rankin recently completed his 16th and final season as the head coach at Alcoa High School where he led the Tornadoes to 13 state titles. Coach Rankin was named the head coach of Boyd Buchanan High school in February 2022. Rankin began his coaching career at Warren County (Tenn.) High School as an assistant coach. In 1982, he earned his first heading coaching position at Smith County (Tenn.) High School and won 58 games in his eight years as a head coach. Rankin then spent 16 years as the head coach at Riverdale (Tenn.) High School, where he won four state championships and finished with a record of 194-25. In his 40 years as a head coach, he is Tennessee High School’s all-time wins leader with a record of 468-78. Rankin also has 16 state championships, which is a Tennessee Secondary School Athletic Association (TSSAA) record. Since Rankin has coached at Alcoa, the team has been to the state championship game all but two years. He has added a long list of accolades, including Knox News Lifetime Achievement Award, coached 13 Tennessee Mr. Football Award winners, one Gatorade Player of the Year, East Tennessee CAREacter Star Coach of the Year award, 2009 Tennessee Titans Coach of the Week, and countless other Coach of the Year awards. Rankin was inducted into the TSSAA Hall of Fame in 2011.

Jake Gilbert, who earned his second straight AFCA Power of Influence Regional honor, completed his 11th season as head coach at Westfield High School by leading the Rocks to a 12-2 record and a second straight appearance in the Indiana High School 6A state championship game. That was Westfield’s fourth appearance in the state championship game under Gilbert. In 2016, he guided Westfield to the school’s first ever state championship. Gilbert has won several Coach of the Year honors including Indiana Football Coaches Association Coach of the Year in 2013 and 2016 and Fellowship of Christian Athletes (FCA) Indiana Coach of the Year in 2017. He has been an FCA sponsor since 2012 and created a Freshman Mentor Program and Life Ready Initiative at Westfield. Gilbert has hosted Special Olympic football clinics, raised money to tackle childhood cancer, led a mission trip to Haiti and helps support the Indiana Blood Center. He also serves on the Westfield City Council and is president of the Wellbeing Coalition of Westfield.

Bill Blankenship joins Coach Gilbert as a two-time Regional POI winner. He finished his fifth season at Owasso High School by leading the Rams to an 8-4 overall record and an appearance in the Class 6A playoffs. Since arriving in 2017 as head coach, Blankenship has led Owasso to two state championships and two semi-final appearances. Prior to Owasso, Blankenship was the head coach at Fayetteville (Ark.) High School in 2016, guiding the Bulldogs to a Class 7A state title with a 12-1 record. He spent nine years as a college coach at Tulsa and Memphis. 2022 AFCA/AFCF Regional Power of Influence Award winners are:

Region 1: Jim Kelliher, Abington (Mass.)

High School Region 2: Rodney Saulsberry Sr., Whitehaven (Tenn.)

High School Region 3: Dwight Lundeen, Becker (Minn.)

High School Region 4: John King, Longview (Tex.)

High School Region 5: Todd Sloat, Fall River (Calif.) High School

Jim Kelliher has been the head coach at Abington High School for 49 years and currently sits fourth for career victories in Massachusetts history with 305. He has guided the Green Wave to three Eastern Massachusetts State titles in Division 5 (2002), Division 3 (2005) and Division 4 (2012) and two overall state championships in Division 5 (2014) and Division 4 (2019). Kelliher graduated from Abington in 1966 and played his college football at the University of Massachusetts. He returned to Abington as an assistant coach for three years before being named head coach in 1974.

Rodney Saulsberry Sr. is in his 25th season at Whitehaven High School and 19th as a head coach. He has an overall record of 180-48 with two Tennessee 6A state titles in 2012 and 2016, the first championships in program history. Over 200 of Saulsberry’s former players have gone on to play college football, and 15 of them have become coaches. He has served on the board of the Tennessee Football Coaches Association and served on the Rules Committee for the Tennessee Secondary School Athletic Association. Saulsberry has been a speaker at various football clinics around the country, including the 2013 AFCA Convention. In 2020, he co-founded the Minority Coaches Association of Tennessee, which helps high school, college and professional coaches in Tennessee foster job opportunities and hosts clinics for continuing education. Saulsberry has earned many awards over his time as head coach, such as a two-time Tennessee Titans Coach of the Week, a Tennessee Titans/Shelby Metro Coach of the Year award winner in 2012 and 2016, three-time Regional Coach of the Year and winner of the Rex Dockery Award from the Memphis Chapter of the National Football Foundation and College Hall of Fame.

Dwight Lundeen started the Becker High School football team in 1970 and has never left. In his 53 years as head coach, Lundeen has amassed an overall record of 390-166-3 with three state championships, 19 section titles, and 24 conference championships. He has served as president and on the executive committee of the Minnesota Football Coaches Association, the Minnesota Interscholastic Activities Administrators Association, and the Minnesota State High School League. Lundeen has been inducted into the National Coaches Association Hall of Fame (2019), Minnesota Activities Directors Hall of Fame (2014), Minnesota High School League Hall of Fame (2014) and the Minnesota Football Coaches Hall of Fame (2009). He is a four-time Minnesota Football Coach of the Year and was named Minnesota Football Coaches Association Man of the Year in 2015.

John King is in his 19th year as head coach at Longview High School. He currently has the Lobos in the semifinals of the Texas 5A state playoffs with a 14-0 record. His overall record sits at 211-43 with a 6A state championship in 2018. King is a past president of the Texas High School Coaches Association and has served on the THSCA Board of Directors. He has served on several committees for the THSCA as well as Treasurer of the East Texas Coaches Association. King was inducted into the East Texas Coaches Association Hall of Honor in 2019 and was named Texas Sportswriter Association 6A Coach of the Year, along with Longview News Journal and American State Bank Coach of the Year in 2018. He has won 15 District Coach of the Year honors in his 19 seasons.

Todd Sloat has coached football for 23 years, with the last 21 coming at Fall River High School. His overall record in eight years as a head coach sits at 78-16 with one California 7AA state championship and six Northern Section titles. Sloat earned California Coach of the Year honors in 2021 and six other Coach of the Year honors in 2006, 2007, 2008, 2017, 2018, and 2021. He stepped down as head coach after the 2021 season and works as an assistant coach with Fall River, helping the Bulldogs to a 12-0 record and the Northern Section championship.
