I was able to get some of the big names behind chile production to sit down and talk to me while we were at the 2020 New Mexico Chile Conference. Chile is such a unique crop that is mostly grown here in the southwest United States and most of that production comes from the driest part of New Mexico. Our state in known for that delicious chile, but did you know that you eat chile in several other food items? We discuss paprika peppers, chile peppers as well as some other popular crops.
