Have you ever bought a watermelon and when you cut it, it’s partially hollow in the center? Well, that’s called Hollow Heart. Watermelons suffering from hollow heart are safe to eat, they just look strange.

Although there are over 1200 cultivars of watermelon, you may only be familiar with the few that you see in your local produce department. Washington University has a list of many more that you've probably never seen before.

How do harvesters know when a watermelon is ready to be picked? Well, they use a refractometer to check the melon's degrees Brix which is a measure of their sugar levels.
