Ep 43 - Heather Osby
Conversations with Anne Elizabeth
09/26/17 • 63 min
Conversation 43: The Story, Journey and Passion of Heather Osby
“If I am in it, then I am all in it. I was working out 4 days a week, doing CrossFit, some yoga and barre and I just wanted to be healthier and do more. If a little is good then a lot must be better right? So I was exposing myself to a lot of semi-questionable nutrition sources and it got to the point where I was almost unhealthy with it. For example, (I believed) healthy was being a raw vegan. My thought process was nothing else was okay and I was really mentally unhealthy about that. That is what I thought you needed to be to be healthy.“ - Healthy Osby
My conversation today is with fitness expert, CrossFit Level 1 Coach, Precision Nutrition Level 1 Coach and Postnatal Fitness Specialist, Heather Osby.
I have had the joy of knowing Heather when I moved to the beautiful city of Des Moines, Iowa, I was connect with her to be my house-hunting warrior. After looking at over 100 homes and then deciding to build, I think that's when she decided she didn’t want to be a real estate agent anymore. No, not really, but life took its tricks and turns and she currently has found her passion in the wellness and fitness world. She is currently a wife and a mom of two, kicking ass in her own garage gym, at her local CrossFit gym and focuses on helping moms all over the country find their own fitness passion, in a safe way. She specializes in pregnancy and postnatal fitness (insert diastasis recti) and even has her own pelvis model she named Nancy to best educate her clients. What I love about her the most is her down-to-earth approach on exercise and nutrition, her virtual business and website and the fact she likes to cuss a little.
A girl after my own heart, please enjoy my conversation with Heather.
Connect with Heather at [email protected] and her business Hot and Healthy Life www.hotandhealthylife.com to work with Heather.
Even though her 2 week #MetconsforMoms challenge is over, you can still register here and get the workouts! Follow her on Instagram and see how fun it was. (My a** is still screaming at me!)

Ep 69 - Liz Dunn, MPH, RDN
Conversations with Anne Elizabeth
04/10/18 • 42 min
Conversation 69: The Story, Journey and Passion of Liz Dunn, MS, RD, LDN
“I really loved science and thought I wanted to go into pharmacy research. It was after my car accident, when I had my spinal cord injury, they said because I was in such good shape that helped me recover from the surgeries a lot better. It was then I thought prevention was a lot better, was what I was interested in and I started looking into dietetics. In my internship program, which was very clinically focused, we had about 1⁄2 a lecture on spinal cord injuries. Most people never learn anything about it, so I definitely want to spread the word. ” - Liz Dunn, MPH, RDN
Today’s conversation is with Liz Dunn, a registered dietitian with a passion for sports nutrition, being active and wheelchair rugby.
This is another episode of where I sing the praises of Instagram and how it brings people together. I started following Liz last year and I remember the first photo of hers I saw. It was of her with holding her paper stating she had passed the RD exam. But what really caught my attention was she said in the caption “I may not be where I hoped to be at this point, but that’s ok.” I remember thinking, neither am I and you know what, it is ok! There is so much more to Liz’s story and I am happy we were able to have such a great conversation.
Please enjoy my conversation with Liz.

Ep 25 - Ashley Pringle, RD-to-Be
Conversations with Anne Elizabeth
04/25/17 • 67 min
Conversation 25: The Story, Journey and Passion of Ashley Pringle, RD-to-Be
“I knew at some point businesses and corporations would require you to become a registered dietitian. I feel like I need to be educated enough (in dietetics) to help people. I don’t think a nutritionist is going to have the education that we get in MNT (Medical Nutrition Therapy). I’m that type of person, if I am going to do something I am going to do it 100% and whole heartedly and do it right.”- Ashley Pringle
My conversation today is with RD-to-Be, Ashley Pringle. I wanted to have a conversation with Ashley, because she went on a trip with a friend to India and decided to go back to school to help people by being a registered dietitian after working in the business world as an HR recruiter. She reveals her perspective on going back to school, the internship application process and where she see’s herself practicing. Not only is she waiting for her internship match, she is getting married in 6 weeks. I am excited to share her journey and her perspective as an RD-to-Be.
I hope you enjoy my conversation with Ashley.

Conversation 21: The Story, Journey and Passion of Lucille Beseler, MS, RDN, LDN, CDE
“As a young dietitian you don’t appreciate all the people you meet along the way. I would say to our young dietitians, stop and savor the moment and appreciate the people that you come in contact with along the way. They may see things in you that you do not see in yourself.” - Lucille Beseler, MS, RDN, LDN, CDE
My conversation today is with Registered Dietitian Lucille Beseler who graciously took time out of her busy schedule to meet with me on a Sunday afternoon. She is a private practice registered dietitian, author and the owner of Family Nutrition Center of South Florida. She has a passion for cooking and painting beautiful flowers. In her spare time, she currently is the President of the Academy of Nutrition and Dietetics and has spent the last year inspiring other registered dietitians for the next century of our amazing profession and and our national organization. During our candid and down to earth conversation, she shares great advice for all dietitians on practicing, advocacy, volunteering, business and just being a great registered dietitian.
I hope you enjoy my conversation with Lucille as much as I did.

Ep 17 - Kathryn Thompson RDN, LD
Conversations with Anne Elizabeth
02/21/17 • 51 min
Conversation 17: The Story, Journey and Passion of Registered Dietitian, Kathryn Thompson, RDN, LD
“Finding the balance of what you eat and what you do is very important for someone recovering from an eating disorder because it can become an issue for compulsive exercise. When I teach multiple (fitness) classes a day, you won’t see me going all out. I am the instructor and I’m their (participants) biggest cheerleader in the room. That balance, I’ve found that and it works for me because I have to be very aware of things in my life. ” - Kathryn Thompson, RDN, LD
My conversation today is with Kathryn Thompson, RDN, LD
Kathryn is someone I have had the joy of collaborating with on different projects involving school nutrition and health. I remember the first day I met Kathryn and her smile and energy were absolutely contagious. As I have gotten to know her over the years, we developed a great friendship and I learned more about her journey to being a registered dietitian nutritionist. She has had an eating disorder and opens up about she realized she needed treatment. Her biggest influence in her decision to become a dietitian, was discovered during her personal recovery.
Please enjoy my conversation with Kathryn.

Ep 06 - Jodi Schweiger RD, CDE, LD
Conversations with Anne Elizabeth
11/08/16 • 47 min
Conversation 6: The Story, Journey and Passion of Registered Dietitian, Jodi Schweiger RD, CDE, LD
“Coming out of that (dietetic) program, I knew I wanted to do something non-traditional in being a dietitian. Back in that time, it was-oh dietitians just do hospitals, there wasn’t so many options out there. But I was lucky to have found an option (in retail) for a non-traditional dietitian role...Isn’t that the point of our career? Anything is possible.” -Jodi Schweiger, RD, CDE, LD
My conversation today is with Jodi Schweiger, RD, CDE, LD
Jodi, my guest today, is a registered dietitian, Certified Diabetes Educator a wife and mom and one of my mentors. When Jodi got out of her internship, she approached a retail business, basically cold calling them and explaining to them why they needed a registered dietitian. In her jobs to follow, she carried on this entrepreneurial spirit and has made things happen for herself professional. Jodi’s story is inspirational and noteworthy.
Enjoy listening to her story.

Ep 04 - Sherry Adams, RD, LMNT
Conversations with Anne Elizabeth
10/25/16 • 51 min
The Story, Journey and Passion of Registered Dietitian, Sherry Adams RD, LMNT
“I wanted to do something more medical and I had a half crazy notion of going to med school at one point, but that didn’t last very long. I really loved working in ICU, have been a Certified Nutrition Support Clinician®(CNSC®) and have taken the test 4 times. Recently, I decided to make the jump (out of clinical) and work with physicians out of the hospital and caring for people in the home setting on enteral and parenteral support.” - Sherry Adams, RD, LMNT
My conversation today is with Sherry Adams, RD, LMNT
Sherry Adams is not only a registered dietitian and but a nutrition support expert. Sherry was my clinical preceptor during my internship and taught me everything I know about tube feedings and TPN’s. She also believed in me so much as an intern, she offered me my first registered dietitian job. She has such a special place in my heart. I knew Sherry’s dietitian journey was interesting, but it was wonderful to sit down with her and listen to her story.
Please enjoy.

Ep 20 - Chef Andrew Kintigh
Conversations with Anne Elizabeth
03/14/17 • 75 min
Conversation 20: The Story, Journey and Passion of Chef Andrew Kintigh
“It’s all science. Whether it’s baking or traditional cooking. It’s the same when you’re plating a normal entree or a salad, there’s all those components that the chef or even the cook (and you don’t have to be a chef to cook great food). There’s so many chefs that aren’t classically trained that are better than chefs that haven’t gone to school. If you’re going to go to school, you definitely need the real life experience of working on a kitchen line and “being in the weeds” - Chef Andrew Kintigh
My conversation today is with Chef Andrew Kintigh
As registered dietitians, we love food and know exactly how food functions in our bodies and many of us incorporate cooking and recipes into our profession. Enter, Chef Andrew. As a registered dietitian, I value the expertise the professionals who work with food daily, which is knowing the science behind cooking. Chef Andrew is someone I have gotten to know over the past couple years and I value him and his education because he knows more about cooking than I do. Chef Andrew shares his journey and a few tips and tricks for the dietitian who loves to cook.
Please enjoy my conversation with Chef Andrew.

Ep 62 - Beverly Price RD, MA, E-RYT 200, C-IAYT, CEDRD-S
Conversations with Anne Elizabeth
02/20/18 • 62 min
Conversation 62: The Story, Journey and Passion of Beverly Price RD, MA, E-RYT 200, C-IAYT, CEDRD-S
“I think for anybody going into the field (of dietetics) who maybe have the mindset of ‘I want to do this’ I think it is really important to be open. As you get different experiences, you see what you want and what you don’t what. Then you can actually apply some of the things that maybe you didn’t think were relevant and it ends up being relevant to what you might be doing in the future. ” - Beverly Price RD, MA, E-RYT 200, C-IAYT, CEDRD-S
Today’s conversation is with Beverly Price, an entrepreneur with a passion for owning her own practice, serving the eating disorders community and yoga.
While attending FNCE last fall, I decided to participate in the Entrepreneur Spotlight during the Nutrition Entrepreneurs Dietetic Practice Group Networking Event. There were a plethora of fantastic RD’s sharing their product and services, with a few catching my eye and Beverly was one of them. She was showcasing her private practice specializing in eating disorders but more specifically her Mindfulness-Based Yoga Therapy Training in Eating Disorders. I did not get a ton of time to talk with her there, so I knew I had to have a podcast with her.
Please enjoy my conversation with Beverly.
Upcoming Training: Mindfulness-Based Yoga Therapy Training Retreat in Eating Disorders for Professionals, October 27-November 3, 2018 - Tucson, Arizona, for more information and to connect with Beverly, go to her website.
