Welcome to the first episode of a new podcast, Brewer's Perspective.

Brews News created the first Australian beer podcast way back in 2011. As Brews News has evolved we discuss the news of the week and also the backgrounds of industry people, probing their experiences in the industry. If you haven’t heard it, you may well be interested in the industry news and insights those shows contain.

Very regularly we get asked to tackle topics that are quite niche and quite technical. The topics are often ones that we would really like to explore, but may be a little off topic of Radio Brews News

That’s one of the reasons we created the BreweryPro channel as the home for content that has higher value but for a more limited audience for our general listener.

Next week the first episode is titled, There’s No Five Second Rule In Brewing, and looks at brewing cleanliness and sanitation. It features Aron McGarrity from Ecolab, but as you’ll hear when it drops, it not looking specifically at chemicals but how brewery design and planning, and systems can make sure your beer is the best it can be.

But before we do that, we wanted to introduce our hosts to give you a little background on the people who will be anchoring the discussions, Anthony Clem and Marcus Cox.

Anthony Clem has been a guest on Beer is a Conversation more than once. During his time with Lion discussing XXXX Pale Ale and also during his time as Head Brewer at Hemingways in Cairns. More recently he worked was a Member of the Quality Committee for the IBA and the judging panel of the RNA, recently started a business as a Brewing Consultant with the intent to give brewery owners the capability and insight to live their dreams of building a craft brewery creating consistently great quality craft beer.

Marcus Cox Hired by Newstead Brewing Co in January 2021 to add some fundamental quality structures, quickly becoming Head Brewer in March. He was the first Australian to judge at European Beer Star awards in Munich, 14 year IBD member and MBAA District Pittsburgh re-founder, former VP and current Past President.

BreweryPro - Brewing quality, testing and BIRA

Brews News ran a story last week detailing the concerning results of a pilot study by Queensland Health. The study saw an analysis of the abv of 25 craft beers and compared the results to the ABV declared on the label.

Eighty per cent of the samples fell outside the allowable variation.

We understand anecdotally that these results have been replicated more widely in informal testing by other bodies.

Following that story, BIRA - Brewing Interlaboratory Reference Analytes - and is the brewing industry’s not-for-profit testing scheme - issued a statement noting that as food and beverage manufacturers, compliance with labelling standards is critical, especially in such a sensitive area as ABV labelling where there are real consumer safety issues at stake.

The group encouraged brewers to participate in the scheme that works to improve the accuracy and reproducibility of analytical beer testing.

We heard from a number of BIRA members and others with a keen interest in market quality of beer wanting to discuss the issue and what follows is the recording of that panel discussion.

In addition to explaining the work of BIRA, this conversation covers a wide range of issues around beer quality testing and its importance.

Welcome to this special BreweryPro podcast looking at gluten in beer.

Over the last 20 years we have seen a significant increase in the number of consumers who avoid gluten or identify as being intolerant to gluten, as well as growing awareness of coeliac disease.

With traditionally-made beers containing gluten, this has seen a rapidly developing market for beers that appeal to those looking at a gluten reduced lifestyle. However, it’s a complex topic.

Professor Michelle Colgrave is an internationally recognised researcher in the field. She leads the Food and Agricultural Proteomics teams at Edith Cowan University and CSIRO, using technology to identify key proteins that will benefit Australia’s food and agriculture industries and improve human health. This week been recognised for major breakthroughs in the analysis of gluten.

The research that was awarded has led to the development of an ultralow-gluten barley, now known as Kebari, which is used in the production of gluten-free cereals, beers and food products with all the nutritional benefits of whole grains, while being safe to be enjoyed by coeliac sufferers. Importantly, she is a great communicator of her expertise, as you will hear, making the complexities of this topic approachable.

BreweryPro - Coping with Covid-19 - Nash Advisory

Kevin Han from Nash Advisory, a Melbourne-based business support and corporate advisory firm told Brews News' The Antidote podcast that the has actively been advising privately owned companies including breweries and distilleries as they confront the current crisis.

“What we've found challenging over the last three weeks is that a lot of our clients are coming to us in a tough position because they've got to make some really challenging decisions around staffing, production, and what they need to do with their business,” he said.

Han said many directors, owners, managers and staff had invested time and money in their businesses and navigating the uncertainty caused by COVID-19 was an unprecedented challenge.

“What we're fielding in terms of calls from our clients is really about business fundamentals.

"Cash is king at this point, how do we manage to pay our staff? How do we manage to pay our rent? What are the best levers that we can pull to get us through what could be a couple weeks, a couple months, or potentially longer?” Han said.

As the 2022 Australian harvest draws to a close, beer drinkers will be getting to experience the release of 2022 green hop ales.

Interestingly, brewing with fresh hops is still a relatively recent development - or at least recently rediscovered development in brewing - but one that has great potential to educate beer drinkers about provenance and also the agricultural nature to beer.

But there is a lot for brewers to be aware of to execute a great fresh hop beer and that’s what this BreweryPro panel is going to look at, planning and executing a great fresh hop beer.

  • Owen Johnston, Sales and Marketing Manager for Hop Products Australia. Owen began his brewing journey in 2005 when he built the largest craft brewery in Tasmania, working as Head Brewer at Moo Brew for 10 years. He has a BSc and MBA from the University of Tasmania and a Master of Science from the International Centre for Brewing and Distilling at Heriot-Watt University in Scotland.
  • Richard Watkins, Co-Founder and Head Brewer at BentSpoke Brewing Co. Rich Watkins is three times crowned Australian Champion Brewer and is Australia’s longest serving craft brewer. He spent much of his career as head brewer at Canberra’ s renowned Wig & Pen before embarking on the venture that is BentSpoke Brewing Co with partner Tracy Margrain. He is highly regarded as a brewer known for pushing the boundaries of his craft, not afraid to experiment and take a chance on a new untraveled path.
  • Reid Stratton, Head Brewer at Bright Brewing. Head Brewer Reid Stratton joined Bright Brewery in March 2019 from New England Brewing Co, NSW. With experience brewing at Jolly Pumpkin Artisan Ales in Michigan and Grand Teton in Idaho, Reid’s brewing experience and qualifications provide Bright Brewery with valuable expertise as the brewery continues to expand its beer production to meet the growing demand.
